Ingredients
- 250 ml water kefir (home-fermented or commercial coconut kefir)
- Half a teaspoon spirulina powder
- Juice of half a lemon
- Thin slice of fresh ginger (optional)
- Ice
Method
- Whisk spirulina into the lemon juice first until smooth — the acidity helps disperse it before adding carbonation.
- Stir gently into the kefir. Do not shake — you'll lose the carbonation.
- Pour over ice; add the ginger slice. Drink immediately.
Why this pairing works
Kefir provides live cultures; spirulina provides prebiotic polysaccharides that support their activity. The combination is better for gut flora than either alone, according to the limited but consistent evidence on algae polysaccharides and Lactobacillus populations. The fizz also helps disguise any remaining spirulina taste.
Note. Add spirulina at the last possible moment before serving — it settles in carbonated drinks faster than in flat liquids.
