Spirulina mint lemonade

Cold pressed lemon juice, fresh mint, maple syrup, and spirulina — the colour is spectacular and the taste is purely citrus-mint. A summer drink that gets compliments without anyone knowing what's in it.

Ingredients

  • Juice of 3 lemons (about 100 ml)
  • 2 g spirulina powder
  • Small handful fresh mint leaves
  • 1–2 tablespoons maple syrup or honey
  • 400 ml cold water
  • Ice and mint sprigs to serve

Method

  1. Dissolve spirulina in 2 tablespoons of the lemon juice, whisking until smooth — the acid helps disperse the powder without clumping.
  2. Add remaining lemon juice, water, and maple syrup. Stir to combine.
  3. Bruise the mint leaves by pressing them between your palms, then add to the jug. Let steep for 2 minutes.
  4. Serve over ice with fresh mint sprigs. The colour will be a vivid green-gold.

Why this pairing works

The acidic environment of the lemon juice actually improves spirulina dispersal, and the strong citrus-mint flavour profile completely overwhelms any spirulina taste. This is the most crowd-pleasing spirulina drink in the community because it looks extraordinary. The lemon also maximises iron absorption from the spirulina.

Note. The colour is most vivid in the first 10–15 minutes. It fades slightly over time as the spirulina settles — stir or shake before second glasses.
