Cold spirulina-mint lemonade

The tonic you actually want to drink in summer. Almost looks like seawater.

Ingredients

  • Juice of 4 lemons (about 150 ml)
  • 1 litre cold filtered water
  • 2 teaspoons spirulina powder
  • 2–3 tablespoons honey or maple syrup, to taste
  • 10 fresh mint leaves
  • Plenty of ice

Method

  1. In a jug, whisk the spirulina with the lemon juice and sweetener until completely smooth — no lumps. The acidity helps it dissolve cleanly.
  2. Top with the cold water; stir.
  3. Bruise the mint between your palms; add. Top with ice. Serve.

Why this pairing works

Citrus and spirulina is one of the most quietly clever pairings in this kitchen — vitamin C dramatically improves the bioavailability of spirulina's iron, and the acidity keeps the colour vivid green instead of brown. Don't add the spirulina to plain water; the lemon is the dispersant.
