Spirulina-tahini salad dressing

Ingredients

  • 3 tablespoons tahini
  • Juice of 1 lemon (3–4 tablespoons)
  • 2 tablespoons cold water
  • 1 small garlic clove, grated on a Microplane
  • 1 teaspoon spirulina powder
  • 1 teaspoon honey or maple syrup
  • Pinch of fine salt

Method

  1. Whisk tahini and lemon juice in a bowl — the mixture will seize and thicken; this is normal. Loosen with the cold water, a tablespoon at a time, until it pours easily.
  2. Whisk in garlic, spirulina, sweetener, and salt.
  3. Tip into a clean jar. Keeps a week refrigerated; shake before each use.
