Ingredients
- 3 tablespoons tahini
- Juice of 1 lemon (3–4 tablespoons)
- 2 tablespoons cold water
- 1 small garlic clove, grated on a Microplane
- 1 teaspoon spirulina powder
- 1 teaspoon honey or maple syrup
- Pinch of fine salt
Method
- Whisk tahini and lemon juice in a bowl — the mixture will seize and thicken; this is normal. Loosen with the cold water, a tablespoon at a time, until it pours easily.
- Whisk in garlic, spirulina, sweetener, and salt.
- Tip into a clean jar. Keeps a week refrigerated; shake before each use.
