Spirulina-coconut snowballs

Three ingredients, no equipment beyond a bowl, ready in five minutes.

Ingredients

  • 100 g pitted dates
  • 60 g desiccated coconut, plus extra for rolling
  • 10 g spirulina powder (1 tablespoon)
  • Pinch of salt
  • Optional: zest of 1 lime

Method

  1. Soak dates in just-warm water for 5 minutes if they aren't soft. Drain and pat dry.
  2. Mash dates with a fork or pulse in a small processor.
  3. Stir in coconut, spirulina, salt, and lime zest until evenly green.
  4. Roll 10 balls. Roll each in extra coconut. Refrigerate.

Why this pairing works

These taste closer to a tropical bounty bar than to anything healthful. Coconut fat is the most generous chaperone for fat-soluble compounds in spirulina, and the lime keeps the colour bright instead of muddy.
