Ingredients
- 100 g pitted dates
- 60 g desiccated coconut, plus extra for rolling
- 10 g spirulina powder (1 tablespoon)
- Pinch of salt
- Optional: zest of 1 lime
Method
- Soak dates in just-warm water for 5 minutes if they aren't soft. Drain and pat dry.
- Mash dates with a fork or pulse in a small processor.
- Stir in coconut, spirulina, salt, and lime zest until evenly green.
- Roll 10 balls. Roll each in extra coconut. Refrigerate.
Why this pairing works
These taste closer to a tropical bounty bar than to anything healthful. Coconut fat is the most generous chaperone for fat-soluble compounds in spirulina, and the lime keeps the colour bright instead of muddy.
