Ingredients
- 1 large handful baby spinach
- 1 ripe banana, frozen
- Juice of half a lime
- 5 fresh mint leaves
- 1 teaspoon spirulina powder
- 200 ml unsweetened almond milk
- 1 tablespoon Greek yogurt (optional, for body)
Method
- Blend the spinach with the milk first — 20 seconds — to liquefy the leaves.
- Add everything else, blend on high for 45 seconds.
- Taste. If too vegetal, add another splash of lime or a date.
Why this pairing works
Spinach has its own non-haem iron load, so this is a useful pairing for anyone consciously building iron status. The mint isn't for show — its volatile oils briefly numb the bitter receptors and cover any vegetal tail-end.
Variations
- Replace banana with half a frozen pear for less sugar.
- Swap mint for basil — it sounds wrong, it isn't.
